Sand Dollar Quinoa-Oat Pancakes
These small bites—sweetened with ½ a fresh banana—have a great carb-to-protein ratio thanks to the gluten-free oatmeal and quinoa grains. You’ll be fueled for your morning with this healthy pancake recipe.

Sand Dollar Quinoa-Oat Pancakes
serves 2
Ingredients
1 cup GF Oatmeal
½ Cup Quinoa Flakes
2 Eggs
½ Banana
1 Cup Unsweetened Coconut Beverage or Almond Milk
1 tsp GF Vanilla Extract
¼ tsp Baking Soda
¼ tsp Baking Powder
Method
1. Put all ingredients in a blender. Blend till and evenly mix together.
2. Spray frying pan with cooking spray. Heat your frying pan to a medium low flame.
3. Pour about 2 tablespoons batter from the tip of a large spoon or from a pitcher onto the hot griddle(Or your greased frying pan).
4. Cook for about two minutes or until the pancake is golden. You should see the pancake edges look dull, then flip the cake gently.
5. Cook other side until golden. Remove & enjoy!
6. Serve with pure maple syrup or eat them plain with a side of banana!

Awesome recipe. I will substitute coconut oil for the canola (canola has a lot of drawbacks) and maple syrup for the agave (agave is refined fructose when all is said and done) and we have a winner
